For our Hojicha, we use selected leaves and stems of Tencha of the Yabukita, Saemidori, and Sakimidori varieties – all from the traditional tea region of Uji in Kyoto.
Gentle roasting at a low temperature develops a harmonious, complex aroma with notes of roasted grains, cocoa and a hint of caramel.
