A coffee with history
Sebastián Ramírez is no ordinary coffee farmer. Raised in a family with four generations of coffee tradition, he took over management of Finca El Placer six years ago – a decision that changed his life. Instead of resigning himself to the challenges of the mass market, Sebastián began producing specialty coffees and exploring new processing methods.
Aromatics & processing
The Geisha White Honey is a coffee that impresses with its aromatic depth. Notes of Lavender, orange zest and blossom honey characterize its profile, but its complexity goes far beyond that – depending on the brewing method, new facets emerge.
The careful processing begins with the harvest of perfectly ripe cherries (95% ripe, 5% semi-ripe). This is followed by 48-hour anaerobic fermentation with CO₂ injection at a constant 18 °C. The coffee then undergoes several gentle drying phases:
✔ 5 days of water immersion with oxygen pump
✔ 20 days of controlled drying at 40 °C & 25 % humidity
✔ 5 days of parabolic drying with Polyshade
This detailed processing gives the coffee an exceptional depth and clarity of flavor.
More than just coffee
Sebastián thinks beyond pure coffee cultivation. In addition to specialty coffee, he also cultivates bananas and plantains and has created an experience center for coffee tourism. In a 350-year-old manor house, visitors can experience firsthand what it means to accompany specialty coffee from plant to cup.
His goal? Taking Colombian coffee to a new level – with innovation, passion, and uncompromising quality.
