More about this coffee
Monteverde is more than just a farm; it's a vibrant ecosystem. At 1,900 meters above sea level, the plants thrive in a unique microclimate with volcanic soils, cool mist, and clear mountain sunshine. This biotope brimming with diversity forms the foundation for exceptional coffee.
For this Java Honey, only ripe cherries are hand-picked and, after selection, left to oxidize for 24 hours. They are then pulped and fermented in water for 24 hours. The producers utilize microorganisms from the environment, which impart their special depth of character to the beans.
Drying then follows. First, for 12 days, the beans are gently dried on the marquesina, a covered drying bed where sun and wind ensure consistent aromas. The beans then continue to ripen in the silo at a constant 38°C. Precise temperature control and rest periods guarantee quality and balance.
