This washed coffee comes from the Huila region of Colombia from various small farmers.
The coffee is picked ripe and pulped the same day. It then undergoes open-air fermentation in tanks or buckets for 12 to 36 hours. The coffee is cleaned of its pulp before being dried on patios.
How was this coffee decaffeinated?
This coffee is decaffeinated using a natural EA decaffeination process.
The sugarcane process has established itself as a groundbreaking technique, generating considerable interest and opening up new possibilities in the field of decaffeinated coffee. This innovative approach utilizes ethyl acetate (EA), a natural byproduct of sugar production (molasses). The process is simple and follows these steps:
- The coffee beans are moistened with water and EA is circulated throughout the process.
- The ethyl acetate interacts with the caffeine in the coffee beans, effectively removing the caffeine while preserving the valuable aromatic substances.
- Once the desired caffeine content is reached, the beans are gently steamed to remove any remaining residue of ethyl acetate.
- The natural EA is extracted from the sugar cane industry around Huila, Colombia and, along with fresh spring water, is the only substance the coffee comes into contact with.

Blooming: 70g water, wait 45 seconds
First infusion: After 45 seconds, pour on 160g
Second infusion: After 1 minute 30 seconds pour on 250g
Total extraction time: 3 minutes
This coffee tends to clog the filter, hence the relatively long brewing time. However, the coffee is really slow, regardless of whether the brewing time is a bit longer or shorter.
This recipe brings out lots of chestnut and persimmon notes, rounded off with a sugar cane sweetness.
