About the APAS cooperative
This coffee comes from the renowned APAS cooperative in São Gonçalo do Sapucaí, Brazil. The 71 members of this community have joined forces to cultivate premium coffee and market it under the APAS brand. Dario has known Mauricio, the founder of APAS, for several years. This long-standing relationship and trust in the quality of the coffee led us directly to his selection.
The APAS cooperative cultivates the Catuai Vermelho, Catuai Amarelo, and Mundo Novo varieties at altitudes between 950 and 1260 meters above sea level. After harvesting, the coffee cherries are dried on the patio and mechanically pulped—a process that brings out the natural flavors and gives our coffee its unique character.
