Our matcha comes from the historic Uji region of Kyoto, Japan's oldest and most renowned tea region, known for its unsurpassed quality. In this region, the high-quality matcha is produced with a unique, meticulous process that perfectly reflects the tradition and art of tea.

Processing: Unlike other teas like Sencha and Gyokuro , where the leaves are rolled, Matcha is ground into a fine powder. The first step in production is steaming the tea leaves to stop oxidation and preserve freshness. After steaming, the leaves are dried in a large kiln, undergoing several drying stages, and reach a moisture content of less than 5%.
The leaf stems and veins are then removed, and the leaves are cut into smaller pieces. The leaves are sorted through air jets, and excess parts such as stems, old leaves, and tea dust are removed.
The final step is the slow grinding of the leaves with a granite millstone into the finest matcha powder. This slow process ensures that the particle size is between 15μm and 30μm, resulting in a particularly fine, flavorful powder. With a single millstone, only about 40g of matcha can be produced per hour, which underscores the artisanal nature of this product.
